Fried, boiled, scrambled or in an omelet, eggs are staples in Aragonese kitchens, and consumption continues to rise. Each person in Aragon ate an average of 158 eggs in 2025, according to data from the Ministry of Agriculture, Fisheries and Food (MAPA). This puts Aragon 8.2% above the national average of 146 eggs per person.

Regarding these figures, Luz de Santos, director of INPROVO, the Interprofessional Organization for Eggs and Egg Products, stresses that Aragon’s data offers a clear picture of the relationship between consumption habits and the agri-food chain. Specifically, de Santos notes: “Aragon’s position above the national average is an indicator of confidence in a versatile food that is very much part of everyday life.” She adds: “Consumers value its practicality and its contribution to a balanced and healthy diet, especially when planning menus without compromising on quality.”

MAPA also puts average monthly spending per person in Aragon at 2.97 euros in 2025, a figure that reinforces the role of eggs as an affordable food that features prominently in regular shopping. In addition, per-capita consumption grew by 4.66% compared with the previous year. Likewise, the INPROVO director emphasizes that: “Behind this habit is a sector that works to ensure the product reaches consumers every week with the highest guarantees, regularity and continuity of supply.”

HIGH CONSUMPTION AS PRODUCTION CONTINUES TO GROW

In addition to its consumption, Aragon also stands out for its production base. The region had a total of 71 egg-producing farms and, according to MAPA, reached production of 235,701 thousand dozen eggs in 2025, an increase of 6.56% compared with the previous year. This trend reinforces the sector’s importance in rural areas. Aragon is also the Spanish region with the highest egg production.

This progress comes at a time when the poultry sector is making a significant voluntary effort to adapt farms to alternative housing systems rather than cages, in line with market developments and consumer demands. In this regard, Aragon had a total census of 8,332,639 hens in 2025, of which 54.12% were already housed in alternative systems, according to MAPA data.

EGGS STRENGTHEN THEIR ROLE IN SPANISH SHOPPING BASKETS

At the national level, according to data from INPROVO’s latest report, egg consumption rose by 5% in volume during the first half of 2026 compared with the same period a year earlier. The category also shows consolidated performance, with households buying an average of 31 eggs per month and spending an average of 3.31 €/kg, figures that demonstrate its established presence in contemporary diets and its position as the most affordable fresh protein.
